Seafood (Fish and Shellfish)

 

Seafood (Fish and Shellfish) Harvesting and Processing is a required course as part of the West Coast Culinary Diploma Program. Studies will take place in the classroom, field school and hands on in the culinary kitchen on our Terrace campus.

Travel to areas in Northwest BC to experience and participate in the harvest, processing and cooking of local seafood and fish for hands-on experience. Learn from Traditional Knowledge Keepers as you participate in harvesting, processing and cooking seafood all the while giving back to the local community hosts. These skills can be transferable to any part of the world when dealing with fish and shellfish in the culinary world.

 

This course is required for successful completion of the West Coast Culinary Diploma Program.
